This is a review for the Mac Knife B0006MM4RE
This is an asymmetrically beveled edge knife. It is for a right-handed person. Checking various websites on sharpening asymmetrical blades it is clear that special skills/attention must be applied to properly sharpen the knife. Total bevel angle (sum of the bevels on both sides of the blade) is 45.5 degrees. No information is provided on the correct angle for each side. The bevel, based on visual inspection, appears to be about 80/20 or 70/30, biased right hand.
This asymmetry is easy to see. just sight down the blade from the back end of the blade. The asymmetry is obvious.
I'm very surprised that no review or question points out the 'handedness' of the knife.
I'm sending it back for two reasons: 1) I don't want to deal with the asymmetrical sharpening issues, and 2) I'm left-handed and my wife is right handed.
From the manufacturer's website'
'The Straight-Cutting MAC Edge
The characteristic MAC edge is a hybrid between the traditional Japanese single beveled chisel edge (Kataba) and the Western V shaped edge (Ryoba), but slightly off-center, with an angle around 45.5 degrees. This edge is extremely versatile with the ultimate combination of sharpness and control, allowing both thin slicing and straight cuts.'
Update 5/7/2018: I contacted MAC Knife. 'Angel Seller', the provider I bought the knife from on this link, is not an authorized reseller. Good luck with any warranty. Pretty much every time I look at this knife it is provided by some other reseller. If you are interested in the knife, I would contact MAC customer service to see if it is an authorized reseller.
Also, MAC says the bevel should be 55/45, biased right-handed. The bias asymmetry on the knife I got was obviously more than that..
Update 5/8/2018: MAC sales says the following current Amazon resellers are authorized dealers 'On that list, Cutlery and More, MV Trading, Urban Living, Yokohama USA, Cooking Depot, and House of Rice are authorized dealers.' Note that Amazon is not an authorized dealer.
